Okay, I'm going to task you guys with a little challenge. By looking at these strawberry and banana cakes, can you tell what's missing? Can't guess? There's absolutely no dairy in there, which means that this yummy cake is totally vegan and slightly healthier for you than normal cake! In honour of Vegan Month, I thought I'd try out a recipe (as an avid meat-eater, cheese lover and baking addict, I was sure that vegan wouldn't be my thing) and I was pleasantly surprised! Using coconut oil instead of butter, almond milk instead of regular milk and banana instead of egg, means that the cake still has the same texture and so you don't miss the dairy. And while I may never be persuaded to go vegan, I will definitely be baking this cake again!
