6 alternative ice cream recipes

July is officially Ice Cream Month which is super exciting if you're a fan of the nation's favourite sweet stuff. Ice cream has to be one of our favourite summer treats. We've rounded up 6 of the best ice cream recipes, ideas and snacks if you're feeling hungry! We've made sure there's at least three vegan (and therefore lactose-free options) here so if you can't or don't want to eat the traditional dairy version, you can still indulge.

1. Pistachio stracciatella

The classic nutty dream plus chocolate? Yes! This is a fancy pants ice cream that is guaranteed to please. Stracciatella is made by drizzling melted chocolate into the cold ice cream as it's churning and this makes the little flakes. So clever!

2. Vegan mint choc chip

This coconut milk-based ice cream is the perfect palette cleanser and refresher for the summers months. The Wallflower Kitchen's recipe is super easy and has a secret ingredient that you probably wouldn't guess... Spinach!

The spinach is used to give the ice cream the iconic mint choc chip green colour but we're promising that you can't taste it. You do need an ice cream maker for this recipe but it's definitely worth it if you have access to one.

3. Make your own Magnum

This is definitely a lot of effort but if you've got a free summer day, why not give it a go? These salted caramel ice cream bars sound ridiculously tasty and we're all about the customisation. Not feeling so crafty and creative? Why not pick up a packet of ready made choc ices, melt some chocolate and grab some toppings to create a customisation station in your kitchen?

4. Paleo cherry bakewell ice cream

This pink pile of deliciousness is also vegan! Another Wallflower Kitchen delight for you guys, this cherry bakewell ice cream looks incredible. Cherries and almonds are such a great flavour combination and this recipe has just a few ingredients. Grab your ice cream maker, pink dessert is coming!

5. Mango sorbet

Curveball! Not strictly ice cream but let's give sorbet some love because it's so refreshing and delicious. The good thing about this mango sorbet recipe is that you don't need an ice cream maker! All you need is mango puree, maple syrup or another sweetener, coconut milk, vanilla essence and a little lime juice. All the ingredients are blitzed together in a food processor and then transferred to a plastic box. Freeze for at least 4 hours and you've got perfect sorbet!

6. Neopolitan popsicles

These pretty as a picture treats are made with Greek yoghurt, cream, vanilla and sugar and then each of the mixtures is flavoured with either fresh, blended strawberries, cocoa powder or added milk for the vanilla section. All you need is an ice-lolly maker and these can be picked up really cheaply from supermarkets! Check out the recipe for more info!
