Ready for a footie feast?

For all you football fanatics out there you probably don’t need reminding of this, but guess what? Now, usually football matches are on at times when you’re going to get a bit peckish, but then you’re going to have a dilemma on your hands: you can’t miss the game but you’re so damn hungry! Well, never fear - I've found you 2 super speedy  recipes that you can follow at half time! Genius huh?

1. Meaty BBQ Sandwich

When it comes to a quick fix meal, what better than a killer sandwich? You can use whatever meat you want, beef, pork or chicken work best. Now, you’re probably thinking “how am I going to have time to cook and shred a joint of meat in 15 minutes?” - Just save some leftovers from a Sunday roast or the week prior and put them to good use for your very own epic burger like below.   • ½ cup of shredded meat
  • ¼ cup of shredded carrots (optional)
  • 2 tablespoons of BBQ sauce
  • 2 teaspoons of light ranch dressing
  • 1 bun (white, brown, wholemeal, or you could even go the whole hog and have a brioche bun!)
  • 1 large lettuce leaf (optional)
The recipe is as simple as the ingredients list, all you need to do is combine the meat, carrots and barbecue sauce in a bowl. Then, spread ranch dressing on the bun. Top with the chicken mixture and lettuce and voila, a super healthy dinner in 10 minutes!

2. The Good Old Pasta Bake (V)

Come on now, we all love a pasta bake because they taste amazing and are so quick to make. At UNiDAYS we decided the best bake is the old favourite: cheese and tomato.
  • Enough pasta for your party
  • 1 tin of chopped tomatoes per half bag of pasta
  • grated cheese to sprinkle on top
First bring a pot of water to the boil and cook your pasta to your taste. Drain and rinse the pasta and put back into the saucepan. Open a tin of chopped tomatoes, pour them into the saucepan with the pasta and simmer. While the tomatoes are cooking you can add either grated or sliced cheese to the saucepan. Add it all to a baking dish and bake in the oven for ten minutes with loads more cheese on top to go crispy. Easy peasy lemon squeezy - now you’ll never have the Food Vs Football battle on your hands ever again!
