3 quick and easy pasta recipes

1. Creamy chicken and campanelle pasta

Ingredients:

  • Diced chicken (200g)
  • Olive oil (2-3 tablespoons)
  • Garlic, for flavour
  • Chilli flakes, for flavour
  • Salt, for flavour
  • Campanelle pasta (or any pasta (225g))
  • Spinach (1 packet)
  • Chopped green beans
  • Sliced mushrooms
  • Sliced green pepper (1)
  • Sliced red onion (1)
  • Spinach (1 packet)
  • Double cream (300ml)
  • Green pesto (95g)
  • Shaved parmesan cheese (100g (optional))

Method:

  1. Heat pan on gas mark 5. Once heated, add 1-2 tablespoons of olive oil, garlic, chilli flakes and chicken and cook until chicken is golden brown.
  2. In another pot, place pasta to boil on gas mark 6 (no lid).
  3. After the chicken is fully cooked, add spinach. Shortly after add green beans, mushrooms and red onion and allow to cook for 10-15 minutes with the lid half on the pan.
  4. Once chicken and vegetables are thoroughly cooked remove from pan and leave to cool. By this time the pasta should also be cooked, drain remaining water and leave to cool.
  5. In a pan add 1 tablespoon of oil and add double cream on gas mark 3. After cream starts to boil add pesto, stir thoroughly.
  6. Finally in a pot mix pasta, chicken/veg and cream/pesto sauce… serve with parmesan cheese* and enjoy!

2. Spicy sausage and spaghetti

Ingredients:

  • Sliced spicy chorizo (110g)
  • Spaghetti (200g)
  • Olive oil (2-3 tablespoons)
  • Chopped tomato tins (2)
  • Garlic, for flavour
  • Chilli powder, for flavour
  • Salt, for flavour
  • Garlic, for flavour
  • Spinach (1 packet)
  • Sliced red onion (1)
  • Chopped coriander (hand full)
  • Shaved parmesan cheese (100g (optional))

Method:

  1. Boil spaghetti in a pot on gas mark 5.
  2. In a pan, heat 2 tablespoons of oil, once that’s heated add garlic, chorizo, chilli powder, salt, red onion and spinach. Allow to cook for 15-20 minutes.
  3. Once thoroughly cooked, remove from heat and leave to cool.
  4. In another pan add 1 tablespoon of oil, both chopped tomato tins and coriander. Once boiling, add to chorizo/vegetables and add spaghetti… serve with parmesan cheese* and enjoy!

3. Victorious veggie and penne pasta

Ingredients:

  • Olive oil (2-3 tablespoons)
  • Garlic, for flavour
  • Chilli powder, for flavour
  • Salt, for flavour
  • Ginger, for flavour
  • Sliced courgette (1)
  • Baby plum tomatoes (hand full)
  • Spinach (1 packet)
  • Sliced red pepper (1)
  • Sliced red onion (1)
  • Sliced spring onion (3)
  • Sliced mushrooms
  • Penne pasta (225g)
  • Shaved parmesan cheese (100g (optional))

Method:

  1. In a pan, add 3 tablespoons of oil with garlic, chilli, ginger, salt, spinach, courgette, red pepper, red onion, spring onion, mushrooms and baby plum tomatoes- leave to cook for 15-20 minutes on gas mark 5.
  2. In a pot, add pasta and allow to boil on gas mark 6.
  3. Once vegetables and pasta are both cooked, mix together… serve with parmesan cheese* and enjoy!
