If you love your marinated chicken with a little pitta bread, some chips or some coleslaw like good old Nando's try this healthy alternative! This is my favourite chicken marinade, it's really tomato-y. The recipe is super simple, I like to add in some Tumeric for bold colour and taste. In a bowl mix together a clove of diced garlic, a splash of oil, squeeze of lemon, pepper, paprika, and a tbsp of tomato paste (around 50p in most supermarkets) and rub over diced chicken pieces. Pop under the grill for 17-20 minutes or pan fry until cooked throughout usually taking 10minutes. Grab yourself your accompanying yummy-ness such as sweet potato wedges, pitta breads, wraps, whatever you fancy and dig in. Easy, DIY Nando's at home!
