It's so easy to turn last night's dinner into todays delicious lunch, all you need to do is plan ahead when you shop. Buy an extra chicken breast or steak and cook it off when you prepare your dinner. It usually cheaper to by meat in bulk too, so you're winning for your wallet and your stomach here! All you've got to do is resist eating it at the same time as your evening meal, that's the hard bit. For example, using the chicken from my DIY Nando's recipe, I can create a super yummy pitta salad for the next day's lunch. This is one of my favourite lunch time recipes as you can just grab some salad bits from the fridge and your meat is already prepared from the night before. Plus, you can pre-make this either the night before or in the morning before heading off to uni, wrap in foil and pop it out at lunch time. Preparation means no £3 pizza slices from the university convenience cafes! Why not try this for dinner tonight and make enough for those Monday lunchtime slumps?
