Let’s be honest, you probably don’t want to buy your lunch every day, right? But then again, you don’t want to be messing around every night making the next day’s lunch. Ah, the struggles. Well, that’s where meal prep comes in! We’ve picked out four of our favourite lunchtime recipes which you can whip up quickly and in bulk. Problem solved.
1. Honey sesame chicken bowls
Fancy making four days worth of lunches in less than half an hour? You’d be a fool not to, especially when it’s as tasty as these honey sesame chicken bowls. These bowls contain all sorts of goodness - we’re talking broccoli, snap peas and chicken. Your lunch game just got a whole lot better.
2. Moroccan chickpea quinoa power salad
It’s time to lunch with a crunch! You can forget faffing around for hours on end because this recipe has just two (yep, two!) simple instructions for making both the power salad part and the honey lemon dressing. We told you this lunch prep business was the way forward. A powerful salad for a powerful person.
3. Roasted sweet potato wraps with caramelised onions
Here at UNiDAYS HQ, we’re big fans of sweet potatoes - not only are they delicious, but they also have many health benefits too. Sweet potatoes are a good source of magnesium, which is the relaxation and anti-stress mineral. Uh huh. These wraps are the ultimate combination of tasty flavours - pesto-coated sweet potatoes, caramelised onions, roasted cherry tomatoes and Parmesan. Absolute heaven in a wrap or what? It’s time to get yo’ prep ON!
4. Roasted red pepper and tomato soup
Is there really anything better than a steaming bowl of comforting soup? We think not. This recipe is super cheap and will only take you around 25 minutes. Absolute dream. Plus, the peppers in this recipe take a step above a standard tin of tomato soup. Peppers = all the flava! After you’ve made a big batch of this tasty lil’ number, simply tub it up, pop it in the freezer and then take it out as and when you want it. Soup, we really do love ya.
