People always say that homemade gifts are the most thoughtful, so why not bake for your Valentine or BFF this year? Not only do these cupcakes look adorable, they’re also super easy to make.
If you don’t think you’re cut out for making your own decorations, you can pick some similar ones in supermarkets and online. This recipe makes 6 large cupcakes.
You will need:
For the cake
115g caster sugar 115g self-raising flour 115g margarine, room temperature 2 eggs
For the buttercream and decorations
140g butter, softened 280g icing sugar 1-2 tbsp milk 100g of white fondant icing or pre-made cake decorations
Cupcake nozzle and piping bag (optional) 6 large cupcake cases
Preheat the oven to 180°c. Add the margarine and caster sugar into a bowl, and cream together until smooth. Add the flour followed by the eggs until the batter is glossy.
Spoon the mixture evenly into the cake cases, pop into the oven for 14-15 minutes until golden brown.
Whilst your cupcakes are baking, add the butter and milk into a bowl. Slowly add the icing sugar, stirring until the mix is smooth.
Leave the cupcakes to completely cool, before icing: using a blunt/palette knife, or piping bag and nozzle, ice each of the cupcakes with buttercream, before adding the cake decorations. To Make edible envelopes, you can use this tutorial here!
